“What to do with extra Red” WineHack sparked a few extra ideas from readers that were sent in to us. So as a follow-on here are a couple other interesting WineHacks for using up extra red wine.

suggest Spaghetti sauce! Great idea!
Here’s a recipe from a friend of mine:
Basic Spaghetti Sauce Recipe
1 tablespoon Olive Oil
2 Onions chopped
4 Crushed garlic cloves or
15 ounces Tomato sauce
1/2 cup Red wine
1 Sweet green pepper
1 teaspoon Dried leaf basil
1/2 teaspoon Leaf oregano
Heat oil in a large saucpan set over medium heat. Add onions and garlic. Sauté for 2 minutes. Add remaining ingredients. Cover and bring to a boil, stirring often. Then, reduce heat and simmer, stirring often for at least 5 minutes.
From Vivi’s reader Jack, another thing that can be done with left over red and a bit more ambition is to create home brew red wine vinegar! Makes sense since air oxidation of the alcohol (ethanol) in wine will form acetic acid aka vinegar. Its more involved and (obviously) time consuming but if you’re up for it and you use Red Wine Vinegar in your recipes then Linda Baldwin over at GangofPour.com has a comprehensive article on how to do it. There is apparently an article in The Art of Eating magazine on the same topic (Thanks Jack!).

It happens to everyone. You open a bottle of red (whatever varietal) and you don’t get back to it for a few days. If its not perfectly preserved it will never taste the same and more often than not it will taste pretty awful. What can you do with it? There is an answer other than "throw it out". Save it for Sangria! You don’t want to use your best wine to create Sangria so left over wine, while OK to drink but not very tasty, is perfect to use in a nice Sangria. Here’s a recipe…
Sangria
- 1 orange, thinly sliced
- 1 lemon, thinly sliced
- 1/4 cup superfine sugar
- 1/2 gallon red Burgundy
- 1/2 cup orange-flavored liqueur
- 2 bay leaves
- 1/2 cup brandy
- 1 quart club soda

Combine and marinate overnight the orange, lemon, sugar, red wine, liqueur and bay leaves. Add the brandy. Just before serving, add club soda and some ice.
Great for parties and BBQs. Got left over white wine thats not to your liking? Thats right, White Sangria or "Sangria Blanco":
White Sangria
- 1 small lemon, sliced thin
- 1 small orange, sliced thin
- 3 tablespoons granulated sugar
- 1 peach, peeled, sliced thin
- 1/4 cup peach schnapps
- 1 (750 ml) bottle white wine, chilled
Combine all the ingredients in a pitcher. Stir the sangria until the sugar is dissolved. Chill for 1 hour.
Strain the sangria into wine glasses and garnish with strawberries and sliced kiwifruit.
